Instructions
Step 1: Assemble the Fruit
- Prepare a 9-inch pre-baked pie shell and let it cool completely.
- Arrange the sliced fresh peaches evenly inside the cooled pie shell.
Step 2: Make the Glaze
- In a medium saucepan, whisk together the sugar and cornstarch. Stir in the water and corn syrup until smooth.
- Bring the mixture to a boil over medium heat, stirring constantly, and boil for 5 minutes until the mixture is thick and clear.
- Remove the saucepan from the heat and immediately stir in the peach Jello powder and optional almond flavoring until the Jello is completely dissolved.
- Let the glaze cool until it is lukewarm but still pourable, about 15 to 20 minutes.
Step 3: Pour and Chill
- Carefully pour the cooled glaze evenly over the peaches in the pie crust.
- Refrigerate the pie for at least 4 hours, or until the glaze is completely set.
- Serve chilled, with whipped cream if desired.
