Instructions

Step 1: Assemble the Fruit

  1. Prepare a 9-inch pre-baked pie shell and let it cool completely.
  2. Arrange the sliced fresh peaches evenly inside the cooled pie shell.

Step 2: Make the Glaze

  1. In a medium saucepan, whisk together the sugar and cornstarch. Stir in the water and corn syrup until smooth.
  2. Bring the mixture to a boil over medium heat, stirring constantly, and boil for 5 minutes until the mixture is thick and clear.
  3. Remove the saucepan from the heat and immediately stir in the peach Jello powder and optional almond flavoring until the Jello is completely dissolved.
  4. Let the glaze cool until it is lukewarm but still pourable, about 15 to 20 minutes.

Step 3: Pour and Chill

  1. Carefully pour the cooled glaze evenly over the peaches in the pie crust.
  2. Refrigerate the pie for at least 4 hours, or until the glaze is completely set.
  3. Serve chilled, with whipped cream if desired.
