Instructions

Step 1: Dissolve Gelatin

  1. In a saucepan, heat 1 cup of orange juice with the sugar and unflavored gelatin. Stir constantly over low heat until the gelatin and sugar are fully dissolved.

Step 2: Mix and Chill

  1. Remove from heat and stir in the remaining 3 ½ cups of orange juice and the apricot nectar.
  2. Chill the mixture in the refrigerator until it is syrupy and has the consistency of unbeaten egg whites.

Step 3: Whip and Fold

  1. In a clean bowl, beat the egg whites until soft peaks form.
  2. Gently fold the whipped egg whites into the chilled gelatin mixture until well incorporated.
  3. Fold in the mixed fruit gently.

Step 4: Mold and Set

  1. Pour into a 1 ½ quart mold and refrigerate for at least 6 hours, or overnight, until completely firm and set.
