Instructions
Step 1: Dissolve Gelatin
- In a saucepan, heat 1 cup of orange juice with the sugar and unflavored gelatin. Stir constantly over low heat until the gelatin and sugar are fully dissolved.
Step 2: Mix and Chill
- Remove from heat and stir in the remaining 3 ½ cups of orange juice and the apricot nectar.
- Chill the mixture in the refrigerator until it is syrupy and has the consistency of unbeaten egg whites.
Step 3: Whip and Fold
- In a clean bowl, beat the egg whites until soft peaks form.
- Gently fold the whipped egg whites into the chilled gelatin mixture until well incorporated.
- Fold in the mixed fruit gently.
Step 4: Mold and Set
- Pour into a 1 ½ quart mold and refrigerate for at least 6 hours, or overnight, until completely firm and set.
