Instructions

Step 1: Bake the Cake

  1. Preheat your oven to 350°F. Grease two 9-inch layer pans.
  2. In a large bowl, cream the 1/2 lbs. (2 sticks) butter and 2 C. sugar until light and fluffy.
  3. Add the 5 eggs, one at a time, and beat well after each addition until fully incorporated.
  4. Fold in the 1 pkg. graham crackers, 1 (7oz.) pkg. coconut, 2 tsp. baking powder, and 2 tsp. vanilla.
  5. Add the 1 cup nut meats last, if using.
  6. Pour the batter evenly into the two 9-inch layer pans.
  7. Bake at 350°F for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean and golden brown.
  8. Let the cakes cool completely on a wire rack before frosting.

Step 2: Prepare the Frosting and Assemble

  1. In a medium bowl, cream the 1 stick margarine and the 1 box confectioner’s sugar until smooth.
  2. Blend in the 1 small can crushed pineapple (with its juice) until the frosting reaches a spreadable consistency.
  3. Pour or spread the frosting onto the cooled cake layers until evenly coated and luscious.
