Instructions
Step 1: Prep and Cream
- Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a large bowl, cream the 3/4 cup butter, softened, and 2 cups sugar together until light and fluffy. Beat in the 4 egg yolks one at a time.
Step 2: Mix Batter
- In a separate bowl, sift together the 3 cups all-purpose flour, 1/2 teaspoon salt, and 4 teaspoons baking powder.
- Add the dry ingredients to the creamed mixture alternately with the 1 cup milk, beginning and ending with the flour mixture. Mix until just combined.
- Stir in the 1 1/2 teaspoons vanilla extract and optional 1 teaspoon orange flavoring or lemon flavoring.
Step 3: Fold and Bake
- In a clean, dry bowl, beat the 4 egg whites until stiff peaks form.
- Gently fold the beaten 4 egg whites into the cake batter in three additions, until no white streaks remain.
- Divide the batter evenly between the prepared pans.
- Bake for 35 to 40 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
