Instructions

Step 1: Mix and Melt

  1. In a large bowl, dissolve 1 package strawberry jello in 1 1/2 cups hot water, stirring for 2 minutes until fully dissolved.
  2. Add 1 pint vanilla ice cream by the spoonful to the hot mixture and stir until it is completely melted and smooth.

Step 2: Chill and Fold

  1. Refrigerate the mixture for 15-25 minutes, or until it has thickened to the consistency of unbeaten egg whites but is not fully set.
  2. Gently fold in 1 cup drained, sliced strawberries until evenly distributed.

Step 3: Assemble and Set

  1. Pour the filling into the prepared 9-inch baked and cooled pie shell.
  2. Chill the pie in the refrigerator for at least 2 hours, or until the filling is completely firm and set.
  3. Slice and serve with whipped cream, if desired.
