Instructions

Step 1: Prepare the Crust

  1. In a bowl, blend the 1 stick margarine, 1 (3 oz) pkg cream cheese, and 1 cup flour until a soft dough forms.
  2. Wrap the dough and chill for 1 hour.

Step 2: Shape and Fill

  1. Preheat oven to 375°F.
  2. Divide the chilled dough into 24 small balls and press each into the cups of a mini muffin tin to form shells.
  3. In a separate bowl, whisk together 3 eggs, 2/3 cup sugar, 1/4 teaspoon salt, 1/2 cup melted butter, 1 cup light corn syrup, and 1 cup finely chopped pecans.
  4. Pour the filling into the unbaked shells.

Step 3: Bake

  1. Bake for 40-50 minutes, or until the filling is set and the crust is golden brown.
  2. Let cool in the pan before carefully removing to ensure they hold their shape.
