Instructions

Step 1: Prepare the Filling

  1. Preheat the oven to 350°F.
  2. In a large bowl, beat the 4 large egg yolks with an electric mixer for about 5 minutes, until thick and creamy.
  3. Add the 1 (14 ounce) can fat-free sweetened condensed skim milk, 1 teaspoon fresh grated lime peel, and 1/2 cup + 1 tbsp lime juice. Beat until well blended and smooth.

Step 2: Bake and Chill

  1. Pour the filling into the 1 (8-inch) ready-made graham cracker crust.
  2. Bake for 30 to 35 minutes, or until the filling is set with only a slight jiggle in the very center.
  3. Let the pie cool on a wire rack for 30 minutes.
