Instructions

Step 1: Prepare the Base

  1. Melt the 3 squares (3 oz) unsweetened chocolate and set aside to cool slightly.
  2. In a bowl, cream the 4 tablespoons butter. Gradually add the first 3/4 cup confectioners sugar and blend well. Stir in the cooled 3 squares (3 oz) unsweetened chocolate, 1 teaspoon vanilla extract, and 1/2 teaspoon salt until smooth.

Step 2: Whip the Meringue

  1. In a separate, clean bowl, beat the 2 egg whites until stiff, glossy peaks form.
  2. Gradually add the second 3/4 cup confectioners sugar to the 2 egg whites, beating well until the mixture is thick, glossy, and stands in firm peaks.

Step 3: Combine and Finish

  1. Gently fold the finished meringue into the chocolate base with a spatula until no white streaks remain and the mixture is uniform.
  2. Use immediately to frost your cake while the texture is light and airy.

💡 Make-Ahead & Storage: This frosting should be used immediately after preparation for the best texture. Due to raw egg whites, keep refrigerated if not serving right away.
