Instructions

Step 1: Prepare the Dough

  1. In a large bowl, cream together the 1 Cup (2 sticks) butter and 2/3 Cup sugar with an electric mixer until light and fluffy.
  2. Add the 1 egg and 1 tsp vanilla and mix well.
  3. In a separate bowl, sift together the 2 1/4 Cups cake flour, 1/2 tsp baking powder, and 1/8 tsp salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  5. Chill the dough in the refrigerator for at least 30 minutes.

Step 2: Bake

  1. Preheat the oven to 375°F.
  2. Shape the dough as desired using a cookie press or by rolling and cutting, then place on ungreased baking sheets.
  3. Bake for 8 to 10 minutes, or until the edges are just beginning to turn golden.
