Instructions

Step 1: Prepare and Poach

  1. Wash, peel, and cut the Pears as desired, then weigh the prepared fruit.
  2. In a large pot, combine 1 pound of sugar and 1 cup of water for every pound of fruit. Bring to a boil, stirring until the Sugar is completely dissolved.
  3. Add the Pears in batches to the boiling syrup. Cook for 10-15 minutes per batch until the fruit is tender and easily pierced with a straw.

Step 2: Pack and Infuse

  1. Using a slotted spoon, remove the cooked Pears and pack them into hot, sterilized jars.
  2. Continue to boil the remaining syrup until it thickens or reaches 222°F on a candy thermometer.
  3. Remove the syrup from heat and let it cool completely. Once cool, stir in 1 pint of brandy for every pint of syrup.
  4. Pour the syrup over the Pears in the jars until overflowing and seal the jars immediately.

💡 Make-Ahead & Storage: Store sealed jars in a cool, dark place; allow the flavors to meld for at least two weeks before serving.
