Instructions

Step 1: Prep and Mix

  1. Preheat oven to 350°F. Line muffin tins with cupcake papers.
  2. In a mixing bowl, combine 1 cup Sugar, 1/2 cup Cocoa Powder, 1/2 cup Shortening, 1 1/2 cups sifted Flour, 3/4 teaspoon Salt, 1 teaspoon Soda, 1 teaspoon Vanilla Extract, 1 Egg, and 1/2 cup Milk.

Step 2: Finish Batter and Bake

  1. Add 1/2 cup boiling Water last to the batter.
  2. Beat the mixture for 3 minutes with an electric beater until smooth and well incorporated.
  3. Fill cupcake papers about two-thirds full with the batter.
  4. Bake at 350°F for 25 minutes or less, checking for doneness with a toothpick until it comes out clean.
