Instructions

Step 1: Prep and Mix

  1. Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  2. In a small bowl, toss the chopped 1 cup dates and 1 cup nuts with the 1 tablespoon flour and 1 teaspoon baking powder to prevent sinking.

Step 2: Batter and Bake

  1. In a separate, larger bowl, beat the 2 eggs and 1 cup sugar together with an electric mixer until the mixture is thick, pale, and fluffy (about 3-5 minutes). Beat in the 1 teaspoon vanilla.
  2. Gently fold the date and nut mixture into the egg mixture until just combined.
  3. Pour the batter into the prepared pan and spread evenly.
  4. Bake for 30 minutes, until a toothpick inserted into the center comes out clean and the top is golden brown.
  5. Let cool completely in the pan before cutting into squares.
