Instructions
Step 1: Prepare the Base
- Preheat your oven to 350°F.
- In a large bowl, cream together the 1 cup shortening, 1 cup brown sugar, and 1/2 cup honey with an electric mixer.
- Add the 2 eggs and mix well.
Step 2: Combine and Bake
- In a separate bowl, whisk together the 1 1/2 to 2 cups flour, 1/2 cup wheat germ, 1/2 teaspoon soda, and 4 tbsp carob powder.
- Add the dry ingredients to the creamed mixture and mix until just combined.
- By hand, stir in the 3 cups oats.
- Fold in your desired amounts of 1 cup raisins, 1 cup sunflower seeds, and 1 cup coconut.
- Drop by rounded spoonfuls onto an ungreased baking sheet.
- Bake for 8-10 minutes, or until lightly browned and set.
