Instructions
Step 1: Make the Chocolate Base
- Preheat the oven to 350°F (175°C).
- In a medium saucepan, combine the 2/3 cup sugar, 1/8 teaspoon salt, and 1 cup light corn syrup. Bring the mixture to a boil over medium heat, stirring until the 2/3 cup sugar dissolves. Boil for 2 minutes.
- Remove the pan from the heat. Add the 4 ounces semi-sweet chocolate chips and 3 tablespoons margarine or butter, stirring until everything is melted and smooth. Let the mixture cool for about 10 minutes.
Step 2: Combine and Bake
- In a separate bowl, have the slightly beaten 3 eggs ready. To temper the eggs, slowly pour the cooled chocolate mixture into the 3 eggs while whisking constantly.
- Stir in the 1 teaspoon vanilla and the 1 cup coarsely chopped pecans until well incorporated.
- Pour the filling into the unbaked 1 9-inch pie shell.
- Bake for 50 minutes, or until the center is just set and may have a slight jiggle.
- Let the pie cool completely on a wire rack before slicing until the filling sets firmly.
