Instructions
Step 1: Prep and Mix Dry Ingredients
- Preheat your oven to 325°F. Grease a 9x5 inch loaf pan thoroughly.
- In a separate medium bowl, sift together the 1 1/2 cups sifted all-purpose flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt.
Step 2: Coat Fruits and Nuts
- In a large bowl, combine the 4 ounces chocolate chips, 2 cups coarsely chopped walnuts, 1 cup coarsely cut dates, 1 cup candied cherries, and 1 cup cut candied pineapple.
- Pour the flour mixture over the fruit and nuts, tossing well to coat everything completely and prevent sinking.
Step 3: Combine Batter and Bake
- In another large bowl, beat the 3 large eggs and 1 cup granulated sugar together until well combined and slightly thickened.
- Fold the flour-coated fruit and nut mixture into the beaten egg mixture until just combined, noting that the batter will be very thick and dense.
- Spoon the batter into the prepared 9x5 inch loaf pan and spread it evenly.
