Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 400°F.
  2. In a large bowl, cream together the 1 cup butter or oleo and 1 cup sugar until light and fluffy.
  3. Beat in the 2 eggs until well combined.
  4. In a separate bowl, sift together the 3 cups flour and 1 tsp. baking soda.
  5. On low speed, add the dry ingredients to the creamed mixture alternately with 1/2 cup lemonade concentrate, beginning and ending with the dry ingredients.

Step 2: Bake and Glaze

  1. Drop by rounded teaspoonfuls about 2 inches apart on an ungreased cookie sheet.
  2. Bake for 8-10 minutes, until the edges are lightly browned and the centers are set.
  3. As soon as the cookies come out of the oven, immediately brush the hot cookies with the remainder of the lemonade concentrate and sprinkle with sugar.
  4. Remove the cookies to a cooling rack to cool completely.
