Instructions

Step 1: Preparation and Mixing

  1. Preheat your oven to 350°F. Grease and flour a standard loaf pan.
  2. In a large bowl, cream the 1 cup brown sugar and 1/2 cup shortening together with an electric mixer until light and fluffy. Add the 2 eggs one at a time, beating well after each addition.
  3. In a separate bowl, sift together the 2 1/4 cups flour, 2 tsp baking soda, 1/2 tsp nutmeg, 1 tsp cinnamon, and 1/4 tsp cloves.
  4. Add the dry ingredients to the creamed mixture alternately with the 2 cups applesauce, beginning and ending with the dry ingredients. Mix until just combined.
  5. Gently fold in the 1 cup raisins and 1/2 cup nuts.

Step 2: Baking and Cooling

  1. Pour the batter into the prepared loaf pan.
  2. Bake for 1 hour, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  3. Let the cake cool in the pan for 10-15 minutes before turning it out onto a wire rack to cool completely.
