Instructions

Step 1: Make the Filling and Batter

  1. Place the 1 (16 oz) package dry Cottage Cheese in a cheesecloth or fine-mesh sieve and press to remove any excess liquid.
  2. In a bowl, mix the squeezed cheese, 1 Egg, 2 tablespoons Butter, and 1/2 teaspoon Salt until very well combined. Set aside.
  3. In another bowl, whisk together the 2 Eggs, 1/2 cup+ Water, 1/2 cup All-Purpose Flour, and 1 pinch Salt until you have the consistency of a thin paste.

Step 2: Cook the Crepes

  1. Heat a lightly buttered frying pan or crepe pan over medium heat.
  2. Stir the batter, then pour about 1/4 cup into the hot pan, swirling to create a thin, round crepe.
  3. Cook for 1-2 minutes until the top appears dry and the bottom is lightly browned (crepes are traditionally only cooked on one side).
  4. Remove the crepe from the pan and stack on a plate. Repeat with the remaining batter, stirring the batter and re-buttering the pan for each crepe.

Step 3: Assemble and Fry

  1. Place a cooked crepe on a flat surface, cooked side up. Place about 1 tablespoon of the cheese filling near one edge.
  2. Fold in the sides, then roll up tightly like a small burrito.
  3. In a clean skillet, melt additional Butter over medium heat. Fry the completed blintzes on both sides until golden brown and the filling is hot. Serve immediately.

💡 Make-Ahead & Storage: Unfried assembled blintzes can be layered with parchment paper and stored in an airtight container in the refrigerator for up to 2 days or frozen for up to 1 month.
