Instructions

Step 1: Make the Batter

  1. In a large bowl, beat the 4 Eggs well.
  2. Add 1 cup of sieved or blended Cottage Cheese and 1 cup of Sour Cream. Beat until completely combined.
  3. Add the sifted 1 cup of Flour, 1 Tbsp of Sugar, and ½ tsp of Salt. Beat the batter until it is smooth and thick.

Step 2: Cook the Blintzes

  1. Heat a griddle or non-stick skillet over medium heat and melt a small amount of Butter.
  2. Pour the batter to create pancakes of your desired size. Cook for 2-3 minutes per side, until golden brown and cooked through.

Step 3: Fill and Serve

  1. As soon as you remove each blintz from the griddle, while it is still hot, place a heaping teaspoon of Cottage Cheese in the center.
  2. Roll it up and place on a serving plate.
  3. Top the warm, filled blintzes with Sour Cream and fresh Strawberries to serve immediately.

💡 Make-Ahead & Storage: Cooked blintzes without filling can be stored in an airtight container in the refrigerator for up to 2 days; reheat gently before filling.
