Instructions
Step 1: Baking
- Mix together 2 1/2 cups sugar, 2/3 cup shortening, 4 beaten eggs, 2 cups pumpkin, and 2/3 water.
- Stir in 3 1/2 cups flour, 2 tsp bak. pow., 1 1/2 tsp soda, 1 tsp salt, 1 tsp cinnamon, 1/2 tsp nutmeg, and 1/2 tsp cloves until just combined, folding in the optional 2/3 cup date, raisins or nuts if desired.
- Bake in 2 loaf pans at 350 degrees for 1 hour until a toothpick inserted in the center comes out clean and the loaves are golden brown.
