Instructions

Step 1: Prepare the Dough

  1. In a small bowl, dissolve the 1 package (1/4-ounce) active dry yeast in the 1 cup warm water and set aside.
  2. In a very large bowl, whisk together 6 cups flour, the 1/4 cup sugar, 4 teaspoons baking powder, 1/4 teaspoon baking soda, and 3 teaspoons salt.
  3. Make a well in the center of the dry ingredients. Pour in the dissolved yeast mixture, 2 cups buttermilk, and 3/4 cup corn oil.
  4. Mix well with a spoon or your hands until a soft dough forms. Add a little more flour from the remaining 1 cup flour if the dough is too sticky to handle.

Step 2: Chilling and Fermentation

  1. Place the dough in a greased, covered bowl and refrigerate for at least 2 hours, or ideally for up to 48 hours to develop its signature tangy sourdough-style flavor.

Step 3: Baking

  1. When ready to bake, preheat your oven to 400°F.
  2. Turn the cold dough out onto a lightly floured surface. Gently pat or roll the dough to about 1/2 to 3/4 inch thickness.
  3. Cut out biscuits using a round biscuit cutter and place them on a lightly greased baking sheet.
  4. Bake for 12-15 minutes, or until golden brown and fragrant. Serve warm.
