Instructions

Preparation and Baking

  1. Preheat your oven to 350°F. Grease a 9-inch Pyrex pie plate.
  2. Place the 2 cups grated zucchini in a colander or clean kitchen towel and squeeze to remove excess water.
  3. In a large bowl, mix together the squeezed 2 cups grated zucchini, 1 cup Bisquick, ½ cup Parmesan cheese, 1 cup chopped onion, 4 eggs, ¼ cup oil, 1 tbsp parsley, and salt and pepper to taste.
  4. Pour the mixture into the prepared 9-inch Pyrex pie plate.
  5. Sprinkle the top with a little extra Parmesan cheese and a dash of paprika.
  6. Bake for 40 minutes, or until golden brown and a knife inserted near the center comes out clean.
