Instructions

Step 1: Activate Yeast and Prepare Liquid

  1. In a small bowl, dissolve 1 pkg fast rising dry Yeast in 1/4 cup lukewarm Water. Let it stand for about 5 minutes until it becomes foamy.
  2. In a saucepan, heat 2 cups Milk until it is scalded, just before boiling with small bubbles around the edge.
  3. In a large mixing bowl, place 1/4 cup Shortening, 1/4 cup Sugar, and 2 teaspoons Salt. Pour the hot scalded milk into the mixing bowl and stir until the shortening is melted. Let this mixture cool until it is lukewarm.

Step 2: Mix the Dough and First Rise

  1. Add the softened yeast mixture, 2 beaten Eggs, and about half of the 5 to 6 cups sifted Flour to the lukewarm milk mixture. Beat with a mixer or spoon until smooth.
  2. Gradually stir in the remaining flour to make a soft dough.
  3. Cover the bowl with a clean cloth and let the dough rise in a warm, draft-free place until it has doubled in bulk, about 1 to 2 hours.

Step 3: Shape and Second Rise

  1. Stir the dough down. With a spoon, fill well-oiled muffin pans about halfway full.
  2. Cover the pans and let the rolls rise again until they have doubled in bulk, about 30 to 45 minutes.

Step 4: Bake

  1. Preheat your oven to 375°F to 400°F.
  2. Bake for 15 to 20 minutes, or until the rolls are golden brown and fragrant.

💡 Make-Ahead & Storage: The shaped unbaked rolls can be covered tightly and refrigerated overnight, then brought to room temperature and allowed to finish rising before baking.
