Instructions

Step 1: Prep and Wet Ingredients

  1. Preheat your oven to 375°F. Grease and flour two 8x5 inch loaf pans.
  2. In a large bowl, beat the 3 eggs. Stir in the 1 cup vegetable oil, 1 1/2 cups sugar, 2 cups zucchini, and 2 teaspoons vanilla extract until well combined.

Step 2: Combine and Bake

  1. In a separate bowl, sift together the 3 cups flour, 1/4 teaspoon baking powder, 1 teaspoon baking soda, 3 teaspoons cinnamon, and 1 teaspoon salt.
  2. Add the dry ingredients to the zucchini mixture and stir until just well blended, being careful not to overmix.
