Instructions

Step 1: Prep and Heat

  1. Preheat your oven to 450°F. Place a greased 10-inch iron skillet in the oven to heat up until scorching hot.

Step 2: Mix the Batter

  1. In a large bowl, whisk together the 1 1/2 cups yellow corn meal, 3 tsps baking powder, and 1 tsp salt.
  2. In a separate bowl, beat the 3 eggs, then stir in the 1 cup buttermilk, 2/3 cup cooking oil, 1 cup cream style corn, 3 jalapeno peppers, and 1 bell pepper.
  3. Pour the wet mixture into the dry ingredients and gently fold until just combined.

Step 3: Assemble and Bake

  1. Carefully remove the hot skillet from the oven. Pour half of the cornbread batter into the skillet.
  2. Sprinkle the 1 cup cheese evenly over the batter layer.
  3. Pour the rest of the batter over the cheese layer, smoothing the top.
  4. Bake for 28 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
