Instructions

Step 1: Prep and Soak

  1. Preheat the oven to 375°F. Grease your muffin cups or line them with paper liners.
  2. In a large bowl, combine the 2 cups whole bran cereal and the 2 cups buttermilk. Let it stand for at least 5 minutes to allow the cereal to soften.

Step 2: Mix the Batter

  1. In a separate bowl, sift or whisk together the 2 ½ cups flour, ¾ cup brown sugar, 2 ½ tsps baking soda, and 2 tsps salt.
  2. Add the 2 beaten eggs and 1 stick (½ cup) melted butter to the bran and buttermilk mixture and stir to combine.
  3. Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Do not overmix.
  4. Fold in the 1 cup chopped nuts.

Step 3: Bake

  1. Fill the prepared muffin cups about ⅔ full.
  2. Bake for 15-20 minutes, or until golden and a toothpick inserted into the center of a muffin comes out clean and fragrant.
