Instructions

Step 1: Prep and Coat Mix-ins

  1. Preheat your oven to 325°F. Grease a 10x5x3 inch loaf pan and line the bottom with greased wax paper.
  2. In a medium bowl, sift together the 1 ½ cups flour, 1 ½ tsps baking powder, and ¼ tsp salt.
  3. Add the ⅔ cup semi-sweet chocolate bits, 2 cups coarsely chopped walnuts, 1 cup finely snipped dates, and 1 cup halved glacéed cherries to the flour mixture, stirring until all fruit and nuts are well coated to prevent sinking.

Step 2: Mix Batter and Bake

  1. In a separate large bowl, beat the 3 large eggs well with an electric mixer at medium speed.
  2. Gradually beat in the 1 cup sugar until the mixture is light and fluffy.
  3. Gently fold the flour, fruit, and nut mixture into the egg and sugar mixture until just combined into a thick batter.
  4. Turn the batter into the prepared loaf pan and spread evenly.
  5. Bake for 1.5 hours, or until a toothpick inserted into the center comes out clean and the loaf is golden brown and fragrant.

Step 3: Cool and Store

  1. Cool the bread completely in the pan on a wire rack.
  2. When cooled, remove from the pan, wrap tightly in foil, and store until ready to slice.
