Instructions
Step 1: Prep and Coat Mix-ins
- Preheat your oven to 325°F. Grease a 10x5x3 inch loaf pan and line the bottom with greased wax paper.
- In a medium bowl, sift together the 1 ½ cups flour, 1 ½ tsps baking powder, and ¼ tsp salt.
- Add the ⅔ cup semi-sweet chocolate bits, 2 cups coarsely chopped walnuts, 1 cup finely snipped dates, and 1 cup halved glacéed cherries to the flour mixture, stirring until all fruit and nuts are well coated to prevent sinking.
Step 2: Mix Batter and Bake
- In a separate large bowl, beat the 3 large eggs well with an electric mixer at medium speed.
- Gradually beat in the 1 cup sugar until the mixture is light and fluffy.
- Gently fold the flour, fruit, and nut mixture into the egg and sugar mixture until just combined into a thick batter.
