| 1 Cup | Whole Wheat Flour | Standard |
| 1 Cup | White Flour | Unbleached |
| 3 tsp. | Baking Powder | Standard |
| 1/2 tsp | Salt | Standard |
| 2 | Eggs | Slightly beaten |
| 1 (8 oz) Carton | Yogurt | Spiced apple-flavored |
| 1/3 Cup | Honey | Liquid |
| 1/4 Cup | Cooking Oil | Standard |
Instructions
Step 1: Prep and Mix Dry Ingredients
- Preheat your oven to 400°F. Grease a 12-cup muffin pan or line it with paper liners.
- In a large mixing bowl, stir together the 1 cup whole wheat flour, 1 cup white flour, 3 tsp. baking powder, and 1/2 tsp salt until well combined.
Step 2: Combine Wet Ingredients and Batter
- In a separate medium bowl, combine the 2 slightly beaten eggs, 1/3 cup honey, and 1/4 cup cooking oil. Stir in the 1 (8 oz) carton spiced apple-flavored yogurt.
- Pour the yogurt mixture into the flour mixture. Stir with a spatula just until the dry ingredients are moistened; the batter will be lumpy and should not be overmixed.
- Fill the prepared muffin cups ⅔ full with the batter.
Step 3: Bake
- Bake for 18 to 20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
