Instructions

Step 1: Mix and Freeze

  1. In a large bowl, thoroughly mix the 2 bananas, 1/4 cup orange juice, 1/4 cup lemon juice, 2 cups pineapple juice, and 1 can (20 oz) crushed pineapple (with its juice).
  2. Place the mixture in a freezer-safe container and freeze until it becomes ‘slushy’ and partially frozen.

Step 2: Blend and Strain

  1. Transfer the slushy mixture to a blender in batches and ‘buzz’ or blend until it is light and frothy.
  2. Strain the frothy mixture through a fine-mesh sieve into a bowl, pressing firmly to extract as much liquid as possible. Discard the remaining pulp until smooth and clear of solids.

Step 3: Chill and Serve

  1. Chill the strained liquid thoroughly in the refrigerator until ice cold.
  2. Stir the chilled drink well before serving, then pour evenly into six 8oz glasses.
  3. If desired, stir 1 oz. light rum into each glass. Garnish each serving with a 6 pineapple sticks (one per glass) and a 6 mint sprigs (one per glass) until vibrant and aromatic.

💡 Make-Ahead & Storage: The base can be prepared, strained, and kept chilled in the refrigerator for up to 24 hours before serving.
