Instructions
Step 1: Mix and Freeze
- In a large bowl, thoroughly mix the 2 bananas, 1/4 cup orange juice, 1/4 cup lemon juice, 2 cups pineapple juice, and 1 can (20 oz) crushed pineapple (with its juice).
- Place the mixture in a freezer-safe container and freeze until it becomes ‘slushy’ and partially frozen.
Step 2: Blend and Strain
- Transfer the slushy mixture to a blender in batches and ‘buzz’ or blend until it is light and frothy.
- Strain the frothy mixture through a fine-mesh sieve into a bowl, pressing firmly to extract as much liquid as possible. Discard the remaining pulp until smooth and clear of solids.
Step 3: Chill and Serve
- Chill the strained liquid thoroughly in the refrigerator until ice cold.
- Stir the chilled drink well before serving, then pour evenly into six 8oz glasses.
- If desired, stir 1 oz. light rum into each glass. Garnish each serving with a 6 pineapple sticks (one per glass) and a 6 mint sprigs (one per glass) until vibrant and aromatic.
