Instructions
Step 1: Mix and Shape
- In a large bowl, combine the 1 lb. sauerkraut, 1 lb. Cheddar cheese, 2 Tbsp onion, 2 Tbsp pimiento, 3 Tbsp green bell pepper, 1 hard-boiled egg, 1/4 cup mayonnaise, 1/2 tsp salt, 1 Tbsp sugar, and 1 jalapeno pepper.
- Mix thoroughly until the ingredients are evenly distributed and hold together.
- Shape the mixture into two equal-sized balls.
Step 2: Ice and Chill
- In a separate small bowl, blend the 8 oz cream cheese and 3 Tbsp milk until smooth and spreadable.
- Spread the cream cheese mixture evenly over the exterior of both cheese balls, coating them like icing.
- Cover loosely and chill in the refrigerator for at least 4 hours until firm and set before serving.
