Instructions

Step 1: Mixing and Shaping

  1. Thoroughly mix all ball ingredients including the 2 cups sauerkraut, 2-3 cups grated cheddar cheese, 2 Tbsp. green onion, 2 Tbsp. green pepper, 2 Tbsp. pimentos, 1 hard boiled egg, 1/2 cup bread crumbs, 1/2 cup mayonnaise, 1/2 tsp. salt, and 1 Tbsp. sugar together in a large bowl.
  2. Shape the combined mixture firmly into a large ball and place it on a serving platter.

Step 2: Coating and Chilling

  1. Whip together the 1 - 8 oz. cream cheese and 2 Tbsp. milk until smooth and spreadable.
  2. Spread the whipped cream cheese mixture evenly over the entire exterior of the sauerkraut ball.
  3. Decorate the outside with additional pimentos and green peppers, then refrigerate overnight or for at least 6 hours until firm and well-chilled.

💡 Make-Ahead & Storage: Can be prepared up to 24 hours in advance and kept refrigerated until ready to serve.
