Instructions
Step 1: Preparation and Grating
- Put 10 oz. Monterey Jack cheese and 8 oz. sharp cheddar cheese in the refrigerator.
- Leave 1 lb. Velveeta cheese and 2 - 8 oz. packages cream cheese out at room temperature until soft.
- Grate or grind 1 pkg. smoked beef, pastrami, or bacon.
Step 2: Mixing and Molding
- In a large bowl, combine the softened cream cheese and Velveeta with the grated cheddar and Monterey Jack.
- Add the grated or ground smoked beef and mix well.
- Since the mixture will be too soft to mold, place it in the freezer for about 15 to 20 minutes until it is firmer and easier to handle.
- Roll the mixture into logs or balls.
- Roll the shaped logs in nuts, sunflower seeds, parsley flakes, red chili powder, ground meat, or whatever coating you prefer.
