Instructions

Preparation and Frying

  1. In a large bowl, combine the 1 lb crab meat, 2 tbsp chopped onion, 4 tbsp mayonnaise, 2 tbsp prepared mustard, 2 tbsp Worcestershire sauce, 2 tbsp melted butter, 3 beaten eggs, and salt and pepper to taste.
  2. Shape the mixture into 6-8 cakes or ovals.
  3. Roll each cake in cracker crumbs until evenly coated.
  4. Fry in deep fat until the exterior is golden brown and crispy.
  5. Remove from the oil and drain on absorbent paper before serving.
