Instructions

Step 1: Mixing and Baking

  1. Preheat oven to 350 degrees F. Grease a 9”x13” ovenproof pan.
  2. Mix 3 cups sliced zucchini, uncooked, 1 cup prepared biscuit mix, 1/2 cup finely chopped onion, 1/2 cup grated Parmesan cheese, 2 T. snipped parsley or parsley flakes, 1/2 t. salt, 1/2 t. seasoned salt, 1/2 t. oregano or marjoram, dash salt, 1 clove crushed garlic, 1/2 cup vegetable oil, and 4 slightly beaten eggs together well.
  3. Spread the mixture evenly in the prepared pan.
  4. Bake until golden brown, about 25 minutes.

Step 2: Serving

  1. Cut into 2”x1” squares.
  2. Serve hot.
