Instructions
Step 1: Prepare the Mixture
- Preheat your oven to 375°F (190°C) or set your broiler to low.
- Drain the 1 (4.5 oz) can canned shrimp well. If using canned shrimp, mash it with a fork. If using larger cooked shrimp, chop them finely.
- In a small bowl, combine the 1 (4.5 oz) can canned shrimp, 1/3 cup mayonnaise, 1 tbsp minced onion (if using), 1 dash salt, and 1 dash pepper.
- You can either stir the 1/4 cup grated cheddar cheese directly into the shrimp mixture now, or save it for topping.
Step 2: Assemble and Bake
- Arrange the approx. 24 crackers in a single layer on a baking sheet.
- Spread a small amount of the shrimp mixture onto each cracker.
- If you did not mix the 1/4 cup grated cheddar cheese in earlier, sprinkle it over the top of each appetizer now.
- Bake for 4-5 minutes or broil for 1-2 minutes, watching carefully, until the topping is hot and the cheese is melted, bubbly, and lightly browned.
- Serve immediately.
💡 Make-Ahead & Storage: The shrimp mixture can be prepared a few hours ahead and stored in the refrigerator. Assemble on crackers just before baking to prevent them from getting soggy.
