  1. Position an oven rack about 4-5 inches from the broiler and preheat the broiler.
  2. Remove the crusts from the 8–10 slices white bread slices. Cut the bread into small decorative shapes, such as rounds, squares, or triangles, using a knife or cookie cutters.
  3. Arrange the bread shapes on a baking sheet. Top each piece with a small slice of 4 oz cold meats or a piece of cooked shrimp.
  4. In a small bowl, thoroughly combine the 1 cup mayonnaise and 1/2 cup shredded cheese.
  5. Spread a layer of the cheese and mayonnaise mixture over each canapé, making sure to cover the toppings completely to the edges of the bread.

Broiling

  1. Place the baking sheet under the preheated broiler. Watch very carefully and broil for 2–4 minutes, or just until the topping is golden brown and bubbly. They can burn quickly!
  2. Remove from the oven and serve immediately while hot.

💡 Make-Ahead & Storage: These canapés are best assembled and broiled just before serving. You can prep the bread shapes and cheese mixture a few hours ahead and store them separately in the refrigerator.
