Instructions

Step 1: Mix the Cheese Base

  1. In a medium bowl, combine the 8 ounces cream cheese, 3 ounces soft cheddar cheese, 1 ounce blue cheese, and 1/2 cup onions. Mix with a spatula or an electric mixer on low speed until thoroughly blended and smooth.

Step 2: Shape and Chill

  1. Scrape the cheese mixture onto a piece of plastic wrap and use the wrap to help shape the mixture into a uniform ball. Wrap tightly and refrigerate for at least 1 hour, or until firm to the touch.

Step 3: Coat and Serve

  1. Spread the 1 cup pecans evenly on a plate or in a shallow dish. Unwrap the chilled cheese ball and roll it in the pecans, pressing gently until the entire surface is completely coated.
  2. Serve immediately with your favorite crackers, pretzels, or fresh vegetable sticks.

💡 Make-Ahead & Storage: The cheese ball can be prepared 1 to 2 days in advance and kept tightly wrapped in plastic wrap in the refrigerator. Roll in pecans shortly before serving.
