| 1 (1 1/2 to 3 lb.) | Frying Chicken |
| 1/2 cup | Flour |
| 1 teaspoon | Salt |
| 1 1/2 teaspoon | Pepper |

| 1/2 cup | Celery |
| 1/2 cup | Green Pepper |
| 1/2 cup | Onion |
| 2 Tablespoons | Butter (for sauce) |
| 1 cup | Catsup |
| 2 Tablespoons | Worcestershire Sauce |
| 1 cup | Water |
| 2 Tablespoons | Brown Sugar |
Instructions
- Cut into pieces a frying chicken (1 1/2 to 3 lbs.) and roll in a mixture of 1/2 cup flour, 1 teaspoon salt, 1 1/2 teaspoon pepper.
- Fry in an equal mixture of Crisco & butter until golden brown.
- Transfer to casserole & pour following sauce over it.
- Saute 1/2 cup chopped celery, 1/2 cup diced green pepper, 1/2 cup sliced onion in 2 T. butter.
- Add a little more butter, 1 cup catsup, 2 T. Worcestershire sauce, 1 cup water, 2 T. brown sugar, salt & pepper.
- Cover casserole & bake 1 hr. at 325 degrees. Yields 5 servings. Serve over rice. This dish can be prepared ahead of time.
