Instructions

  1. Place the chicken back and neck in a large pot and cover with water.
  2. Bring to a simmer and cook for 1.5 to 2 hours.
  3. Add onions and salt to the pot.
  4. Strain the entire contents of the pot through a cheesecloth to create a clear broth.
  5. Return the clear broth to the pot.
  6. Add chicken wings and peas to the broth.
  7. Cook for another 30 minutes or more, until the wings are tender.
