Instructions
- Place the chicken back and neck in a large pot and cover with water.
- Bring to a simmer and cook for 1.5 to 2 hours.
- Add onions and salt to the pot.
- Strain the entire contents of the pot through a cheesecloth to create a clear broth.
- Return the clear broth to the pot.
- Add chicken wings and peas to the broth.
- Cook for another 30 minutes or more, until the wings are tender.
