| 1 Medium | Eggplant |
| 3/4 Cup | Crushed Soda Crackers |
| 1/4 Cup | Mayonnaise |
| 1/3 Cup | Parmesan Cheese |
Instructions
- Trim & peel eggplant.
- Cut into 1/2 inch thick slices.
- Lightly spread mayonnaise on each side & dredge in well-mixed crumbs & cheese.
- Repeat on each side.
- Place on an ungreased cookie sheet & bake at 420° until lightly browned & tender, about 15 min.
- Turn & brown underside.
