Instructions
- Preheat oven to between 375°F and 400°F.
- Generously butter a Pyrex pan.
- Cook the noodles according to package directions, then drain.
- Separate the eggs.
- In a large bowl, create the cheese preparation by mixing the cottage cheese, lemon juice, lemon rind, sugar, a pinch of salt, and cinnamon.
- Beat the egg yolks well and add them to the cheese preparation.
- Stir the cooked noodles into the mixture.
- In a clean, separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the noodle and cheese mixture.
- Pour the final mixture into the prepared buttered pan.
- Bake until the top is browned.
