Instructions

  1. Preheat oven to between 375°F and 400°F.
  2. Generously butter a Pyrex pan.
  3. Cook the noodles according to package directions, then drain.
  4. Separate the eggs.
  5. In a large bowl, create the cheese preparation by mixing the cottage cheese, lemon juice, lemon rind, sugar, a pinch of salt, and cinnamon.
  6. Beat the egg yolks well and add them to the cheese preparation.
  7. Stir the cooked noodles into the mixture.
  8. In a clean, separate bowl, beat the egg whites until stiff peaks form.
  9. Gently fold the beaten egg whites into the noodle and cheese mixture.
  10. Pour the final mixture into the prepared buttered pan.
  11. Bake until the top is browned.
