1 poundFresh Cranberries
2 cupsWater
2 cupsSugar

Instructions

  1. Wash the cranberries.
  2. In a saucepan, boil the cranberries with the water until the berries stop popping.
  3. Strain the mixture through a sieve into a clean pot, pressing on the solids to extract as much pulp as possible. Discard the skins and seeds.
  4. Bring the strained liquid to a rapid boil. Add the sugar and continue to boil for 8 to 10 minutes, or until a drop of the sauce jells when placed on a cold plate.
  5. Immediately pour the hot mixture into a mold that has been rinsed with cold water (do not dry).
  6. Chill in the refrigerator until firm.
