| Four | Hard-boiled Eggs, sliced |

| One | Large Red or Green Bell Pepper, sliced |
| For the Dressing: | |
| Cup | Olive Oil |
| Three to Four Cloves | Garlic, minced |
| One Tablespoon | Sesame Seeds |
| Three Tablespoons | Lemon Juice |
| Three Tablespoons | Soy Sauce or Tamari |
Instructions
- Prepare the Salad
- In a large bowl or platter, put the ingredients in layers. Start with a bed of fresh spinach, followed by layers of the sliced red or green pepper and chopped green onions.
- The card notes the sliced hard-boiled eggs should be the top layer. Arrange them over the other salad ingredients.
- Sprinkle with two tablespoons of sesame seeds. Set aside.
- Prepare the Dressing
- In a small skillet, heat cup of olive oil over medium-high heat.
- Add three to four cloves of minced garlic and one tablespoon of sesame seeds to the hot oil. Sauté briefly until fragrant.
- Turn off the heat but leave the pan on the burner.
- Add three tablespoons of lemon juice and three tablespoons of soy sauce or tamari to the pan. Stir to combine.
- Immediately pour the hot dressing over the layered salad. Do not toss it. Serve at once.
