For the Salad:
One & BunchesFresh Spinach
One BunchGreen Onions, chopped
FourHard-boiled Eggs, sliced
Two TablespoonsSesame Seeds
OneLarge Red or Green Bell Pepper, sliced
For the Dressing:
CupOlive Oil
Three to Four ClovesGarlic, minced
One TablespoonSesame Seeds
Three TablespoonsLemon Juice
Three TablespoonsSoy Sauce or Tamari

Instructions

  1. Prepare the Salad
    1. In a large bowl or platter, put the ingredients in layers. Start with a bed of fresh spinach, followed by layers of the sliced red or green pepper and chopped green onions.
    2. The card notes the sliced hard-boiled eggs should be the top layer. Arrange them over the other salad ingredients.
    3. Sprinkle with two tablespoons of sesame seeds. Set aside.
  2. Prepare the Dressing
    1. In a small skillet, heat cup of olive oil over medium-high heat.
    2. Add three to four cloves of minced garlic and one tablespoon of sesame seeds to the hot oil. Sauté briefly until fragrant.
    3. Turn off the heat but leave the pan on the burner.
    4. Add three tablespoons of lemon juice and three tablespoons of soy sauce or tamari to the pan. Stir to combine.
  3. Immediately pour the hot dressing over the layered salad. Do not toss it. Serve at once.
