| Measurements | Ingredients |

| 1 lb. | Fresh Spinach |
| 2 | Green Onions & Tops, Sliced |
| Coarsely Ground Pepper to taste | |
| 5 slices | Bacon, Diced |
| 2 Tbsp. | Wine Vinegar |
| 1 Tbsp. | Lemon Juice |
| 1 tsp. | Sugar |
| ½ tsp. | Salt |
| 1 | Hard Cooked Egg, Coarsely Chopped |
Instructions
- Wash Spinach, Discarding Stems; Pat Dry On Paper Towels.
- Tear In Bite Sized Pieces; Place In Bowl.
- Add Onion; Sprinkle With Pepper.
- Chill.
- Fry Bacon Bits In Deep Chafing Dish On Electric Skillet Over Low Heat Until Crisp.
- Add Vinegar, Lemon Juice, Sugar, & Salt.
- Add Spinach; Toss Just Until Leaves Are Coated & Slightly Wilted.
- Sprinkle With Egg.
