| ¾ Cup | Wine Vinegar |
| ½ Cup | Olive Oil |
| 2 Tablespoons | Sugar |
| 1 Teaspoon | Salt |
| ½ Teaspoon | Oregano |
| ¼ Teaspoon | Pepper |
| ½ | Small Cauliflower |
| 2 | Carrots |
| 2 Stalks | Celery |
| 1 | Small Green Pepper |
| 4 oz Jar | Pimentos, drained |
| 1 3oz Jar | Green Olives |
| 1 1/4 Cup | Water |
Instructions
- Mix vinegar, olive oil, sugar, salt, oregano, and pepper.
- Add 1 ¼ cup water in large saucepan.
- Separate Cauliflower into florettes.
- Cut carrots into 2-inch strips.
- Cut celery into 1-inch strips.
- Cut green pepper into strips, Chop pimentos.
- Add cauliflowerets, carrots, celery, green pepper, pimentos & olives to vinegar mixture.
- Simmer 5 minutes.
- Chill 24 hours. Drain well before serving.
