A perfect retro salad for a luncheon. This savory mousse features flaked white tuna, cottage cheese, and pimientos set in a lemon-gelatin base with chicken gumbo soup and mayonnaise.

MeasurementsIngredients
1 CupWhite Tuna, flaked
1 CupChicken Gumbo Soup (undiluted)
2 T.Chopped Pimiento
2 T.Chopped Celery
1 T.Chopped Onions
1/2 CupMayonnaise
1/2 CupCottage Cheese
1 small pkg.Lemon Flavored Gelatin
1/2 CupBoiling Water
1 T.Lemon Juice

Instructions

  1. Dissolve gelatin in boiling water; add lemon juice.
  2. Stir in all the remaining ingredients (tuna, soup, pimiento, celery, onions, mayonnaise, cottage cheese).
  3. Pour into a mold.
  4. Chill until set.
