Instructions

Tasty Tater Tot Casserole Assembly & Baking

  1. Spread 1 package frozen mixed vegetables evenly in the bottom of a casserole dish.
  2. Place 1 lb. browned ground chuck directly on top of the vegetable layer.
  3. Spread 1 can cream of mushroom soup evenly over the meat, then pour 1/4 cup milk over the top.
  4. Arrange 1 package frozen tater tots in neat rows across the top of the casserole.
  5. Bake uncovered at 375°F for 30 minutes until the tater tots are golden brown, crispy, and the edges are bubbling hot.

Chuck Roast Marinade Preparation

  1. Combine 1 1/2 cups salad oil, 3/4 cup soy sauce, 1/4 cup Worcestershire sauce, 2 tbsp dry mustard, 2 1/2 tsp salt, 1 tbsp coarse black pepper, 1/2 cup red wine vinegar, 1 1/2 tsp dried parsley flakes, 2 cloves garlic, and 1/3 cup fresh lemon juice in a medium bowl.
  2. Mix well until thoroughly emulsified. This makes about 3 1/2 cups marinade.
  3. Pour over chuck roast or steaks to marinate. The marinade can be drained from the steaks and saved for a second use before broiling.

Chow Mein Casserole Variation

  1. Brown 1 lb. ground beef in a skillet and drain excess fat.
  2. In a baking dish, mix the browned meat with 1/2 cup rice, 2 cans cream of chicken soup, 1/4 cup soy sauce, and 1 1/2 cups water.
  3. Bake for 30 minutes.
  4. Top with 1 can chow mein noodles and cook for an additional 30 minutes until the noodles are toasted and the rice is tender.

💡 Make-Ahead & Storage: The Tater Tot Casserole can be assembled up to 24 hours in advance, covered, and stored in the refrigerator. Add 5 to 10 minutes to the baking time if cooking directly from the fridge.
