A simple and comforting baked casserole. Sliced summer squash (or zucchini), tomatoes, and onions are layered, seasoned, and baked with a cheesy cheddar topping.

MeasurementsIngredients
2 lbs.Squash (e.g., yellow or zucchini), sliced
3Tomatoes, sliced
2 mediumOnions, sliced
1 tspSalt
1/8 tspPepper
2 T.Butter or Margarine
1/2 CupSharp Cheddar Cheese, grated

Instructions

  1. Preheat oven to 350°F.
  2. Wash and slice squash and place in a greased baking dish.
  3. Cover with tomato and onion slices.
  4. Sprinkle with salt & pepper.
  5. Dot with the butter or margarine.
  6. Sprinkle with cheese.
  7. Bake at 350°F for about 45 minutes.
