| 2 cups | Mashed Potatoes |
| As Needed | Half-and-Half or Milk (for mashing) |
| 8 ounces | Cream Cheese, softened |
| 2 | Eggs |
| 1 small | Onion, diced (optional) |
| 2 tablespoons | All-Purpose Flour |
| To Taste | Salt and Pepper |
| 1 small can | French Fried Onions (approx. 2.8 oz) |
Instructions
- Preheat oven to 300°F. Grease a baking dish.
- Prepare 2 cups of mashed potatoes to your liking, using half-and-half or milk.
- To the warm mashed potatoes, add the softened cream cheese, eggs, and flour.
- Using an electric mixer, beat the mixture on low speed to combine, then switch to high speed and beat until the mixture is very light and fluffy.
- Stir in the diced onion (if using) and season with salt and pepper to taste.
- Pour the potato mixture into the prepared baking dish.
- Sprinkle the French fried onions evenly over the top.
- Bake for 35 minutes, or until heated through.
