2 cupsMashed Potatoes
As NeededHalf-and-Half or Milk (for mashing)
8 ouncesCream Cheese, softened
2Eggs
1 smallOnion, diced (optional)
2 tablespoonsAll-Purpose Flour
To TasteSalt and Pepper
1 small canFrench Fried Onions (approx. 2.8 oz)

Instructions

  1. Preheat oven to 300°F. Grease a baking dish.
  2. Prepare 2 cups of mashed potatoes to your liking, using half-and-half or milk.
  3. To the warm mashed potatoes, add the softened cream cheese, eggs, and flour.
  4. Using an electric mixer, beat the mixture on low speed to combine, then switch to high speed and beat until the mixture is very light and fluffy.
  5. Stir in the diced onion (if using) and season with salt and pepper to taste.
  6. Pour the potato mixture into the prepared baking dish.
  7. Sprinkle the French fried onions evenly over the top.
  8. Bake for 35 minutes, or until heated through.
